This process involves removing the skin and pulp from the coffee cherries, similar to the washed method, but allowing some of the sticky, honey-like mucilage to remain during drying.

 

In regions like Minas Gerais and Bahia, where this method is prevalent, the pulped natural process often leads to coffees with a medium body, enhanced sweetness, and pronounced fruity and floral notes. The controlled fermentation from the remaining mucilage contributes to the complexity of flavours.
